Lab:eculent is a gastronomic laboratory and test kitchen focused on culinary innovations in food preparation, molecular interpretation and transformation, and taste craftsmanship. We utilize modernist culinary techniques to develop innovations in heat transfer, ingredient pairings, texture adaptations and of course new recipes for the restaurant. Lab:eculent is outfitted with state-of-the-art equipment, including centrifuges, rotary evaporators, freeze dryers, liquid nitrogen systems, pressure vessels and filtration systems. Lab:eculent also features one of the largest ingredient libraries in the world. Currently over 650 ingredients have been identified, tested, and archived for culinary use.

Lab:eculent’s mission goes beyond the restaurant to include education and outreach in the community. To help innovate at the highest level possible Lab:eculent utilizes visiting chefs, musicians, artists, and even magicians to drive experimentation at all levels.
